
The brief: Facilitate in-house mayo manufacturing for deli products
Greencore Salads approached us wanting to expand its production capacity. More specifically, its production of sugar-free mayonnaise to accompany the wider range of deli products the Spalding-based firm offers.
Greencore told us they wanted to be able to store more mayonnaise – and that every last drop would need to be efficiently dispensed directly to the deli factory. Efficiency and hygiene were key considerations. Following the consultation process, we went away and designed a bespoke package to suit their requirements.
The solution: Installation of two X 4M³ stainless steel mayo vessels
Totalling £150,000, the project involved the design, supply and installation of two 4m3 stainless steel storage vessels, along with associated food and beverage processing control systems.
The size of the two vessels was selected very deliberately. In combination, they are able to store an entire day’s worth of mayonnaise production – just what the client needed.
Measuring 1,700mm in diameter and 1,800mm in height, the tanks were finished with 15 degree cones on top and bottom. Each one was mounted on four tubular steel legs, complete with compensation plates and adjustable feet.
Clean in place system capability was a key requirement from the outset, so this was built into the design of both tanks. We installed a complete sycamore CIP set, including a pump capable of handling up to 16m3 and 4.5 bar of pressure.
The result: 20% increase in mayo production
